Priest’s Pancakes

This recipe has been tried & tested

These delicate, silver-dollar pancakes are light, fluffy, and delicious.

Ingredients :1 cup(s) flour, 1 tablespoon(s) baking powder, 1 teaspoon(s) salt, 1 tablespoon(s) sugar

,  2/3 cup(s) milk, 2 tablespoon(s) butter, melted and cooled, 2 eggs, separated

Directions

1. Sift flour, baking powder, salt, and sugar together in a large bowl. Whisk in milk, butter, and egg yolks. Beat egg whites to soft peaks and fold into batter.

2. Heat a griddle or skillet over medium heat and melt 1 teaspoon butter until it begins to foam. Spoon heaping tablespoons batter onto griddle. Flip when a few bubbles form; when pancakes are golden brown, serve immediately.
